Take-a-cake’s VANILLA CUPCAKE RECIPE
We are visiting our favorite bakery, Take-a-cake. We watched the making of vanilla cakes, surrounded by the pleasant aromas of freshly baked cupcakes, morning coffee and a light conversation about kids, friends and dreams.
After I saw how easy they were to make, I couldn’t resist trying them at home.
Here’s Take-a-cake’s original recipe for 12 cupcakes:
- 125 g flour
- 5 g baking powder
- 2 eggs
- 125 g sugar
- 125 g (one small package) butter
- 2 tbsp milk
- a dash of vanilla
Method:
Whisk together the butter and the sugar until you get a pale fluffy mixture.
Add the eggs one by one, then the sifted flour (with the baking powder mixed in) and the milk.
Fill into the parchment-filled cupcake tray.
Bake for 15 minutes, or until golden. It’s important to transfer them on some sort of grate as soon as they are out of the oven.
Here are some important tips:
- The butter and the eggs should always be at room temperature.
- If the milk is too cold, the mixture might become flaky.
- The flour must be sifted – and not whisked for too long.
When the cupcakes are ready, it’s time for the frosting:
- 250 g butter
- 500 g confectioner’s sugar
- a bit of vanilla
Whisk together until you get a creamy mixture which you can use to make the flowers on the cupcakes.
A sweet tip from Take-a-cake:
-If you want to fill your cupcakes with jam, simply cut up a lid, make a hole, fill it and put the lid back on. Frost the cupcake to hide the hole.
